Thanks. I don't know much about spermatine but am adding it to the growing list of things I want to look into,

I add spermitine rich foods to my diet as studies have shown it extends life span in yeast, fruit flies, mice, etc. about as much as Resveratrol.

Yes vegetables and vegetable drinks like celery juice can contain a lot of nitrates that convert to nitrites in the body. It is very difficult to get away from them since vegetables seem to be among the most healthy foods.

Hormel now sells nitrate-free lunchmeat:

http://www.hormelnatural.com/

The high pressure technology that was invented and used is an interesting read elsewhere.

Also, Trader Joe's sells "uncured" bacon, hot dogs and lunchmeat. However, most brands moronically add concentrated celery juice which contains naturally occuring nitrates.

Res
Of course you are right about curcumin, and a number of other substances in the firewall against neurological degeneration are also important. I did not mention them in this blog post because the post was only about daily foods, not supplements. vince

Deadmeat:
Thank you very much for posting these referenes. I have seen the ones about lithium and cimnamon but the others are new to me. Lithium is an amazing substance and I have thought about writing about it. While not about foods I eat your items do lend a lot of depth to the question of what to do to ward off Alzheimer's disease dementia. A great contribution. Vince

Hi Vince

Perhaps you find this article about the water extract of cinnamon against tau tangles interesting.
http://www.ncbi.nlm.nih.gov/pubmed/19433898
“An aqueous extract of Ceylon cinnamon (C. zeylanicum) is found to inhibit tau aggregation and filament formation, hallmarks of Alzheimer's disease (AD). The extract can also promote complete disassembly of recombinant tau filaments and cause substantial alteration of the morphology of paired-helical filaments isolated from AD brain. Cinnamon extract was not deleterious to the normal cellular function of tau, namely the assembly of free tubulin into microtubules.”

And some anecdotal evidence.

http://alzheimers.infopop.cc/eve/forums/a/tpc/f/675102261/m/6051008062

Also see this very interesting info about lithium aspartate(not to be confused with lithium carbonate).
http://www.nia.nih.gov/Alzheimers/ResearchInformation/NewsReleases/Archives/PR2003/PR20030521lithium.htm
“An enzyme crucial to formation of Alzheimer's plaques and tangles may hold promise as a target for future medications, suggest studies in mice and cells. By blocking the enzyme, lithium stems the accumulation of beta amyloid, which forms Alzheimer's plaques, scientists funded by the National Institutes of Health (NIH) report in the May 22, 2003 "Nature." Inhibiting the enzyme, glycogen synthase kinase - 3 alpha (GSK-3 alpha), also blocks formation of neurofibrilary tangles by the "tau" protein.”

And a very nice article about it and its other neuroprotective effects.
